Montasio PDO is a cooked cheese, semi-hard cheese, made exclusively from cow's milk harvested in the area of production.
It is characterized by three degrees of maturation:
- Fresh: Over 60 days of ripening - Has a soft and delicate flavor that is reminiscent of the milk from which it is produced
- Mezzano: over 4 months of ripening - The flavors are bolder, with particular characterizations of fullness
- Mature: more than 10 months of ripening - Get tastes particularly aromatic although spiciness is not excessive, suitable for consumers who prefer strong flavors
