Formaggio Soligo (Soligo cheese) was the first product created back in 1883 by Latteria Soligo when it was first established. It is a pressed cow’s milk cheese that, thanks to the microbial population selected over more than 100 years, gives rise to a cheese with a characteristic sweet flavour that is also found in the Gold Selection,aged for more than 12 months, and this is unusual in this type of cheese.
Formaggio Soligo is available as:
• Soligo Fresco (mild): at least 60 days aging
• Soligo Mezzano (medium): from 90 to 240 days aging
• Soligo Selezione Oro (gold selection): more than 12 months aging
